Concentrating between Courses at School v/s LeetCode for New Grad SDE roles

Most companies in the US ask questions from LeetCode or CTCI for their technical rounds. A few behavioral questions for their behavioral /magagerial rounds for entry-level new grad SDE roles. I'm actually wondering if the courses that we take at college even matter.

We put in a lot of work and study subjects like Cryptography, OS, Computer Newtorks, AI, Datamining, etc. Most of the courses are really theoritical.

So, do courses we take in colleges really matter? Most companies do not care about the GPA too. Is it better if we take up easier courses (the ones with less work-load) and concentrate on improving our DS and problem solving skills. (I have a good understanding of CS fundamentals though)
