Years of experience plays a role in FLAG interview?

Hi community:

Could someone please clear my fuzziness in how big corps evaluate candidates:

Let's say I have 10+ years of experience in some unknown small startups
Hypothetically, one day I went to a google/fb interview, did an ok job, but not good enough to justify a 10+ years (L5). Will that many YOE work against me and get me rejected? Say I am still well suited for L2/L3. Will they still offer me the job, but with a lower level? Let's say I'm ok with that.

On the flip side, will that many years of experience increase difficulty level of the interview?

I intially thought the longer I worked, the harder it becomes for me to go to these big names. Tell me If I'm wrong ;)
